Change latitude to see how the celestial pole moves in your sky. In the northern hemisphere Polaris sits about as many degrees above the horizon as your latitude. In the southern hemisphere the south celestial pole rises instead, and star trails rotate the opposite way.
Flat maps can draw stars, but they struggle to explain why opposite hemispheres see different celestial poles with opposite apparent rotation while the equator sees stars rise and set in nearly vertical arcs.
